Meatball Sub Casserole

I wanted to share a delicious comfort food recipe, which is perfect for a cold or snowy night!

Meatball Sub Casserole, from Gooseberry Patch

Serves 6

  • 1 loaf Italian Bread, cut into 1″ thick slices
  • 8 ounces Cream Cheese, softened
  • ½ cup Mayonnaise
  • 1 t. Italian Seasoning
  • ¼ t. Pepper
  • 2 cups Shredded Mozzarella, divided
  • 1 pound Frozen Meatballs, thawed
  • 28 ounces Pasta Sauce
  • 1 cup Water

-Preheat oven to 350*.

-Arrange bread slices in a single layer in an ungreased 13″x 9″ baking pan.

-Combine cream cheese, mayo and seasonings in a bowl. Spread over bread slices. Sprinkle with 1/2 cup cheese.

-Gently mix together meatballs, pasta sauce and water. Spoon over bread/cheese in pan.

-Sprinkle with remaining cheese.

-Bake, uncovered, for 30 minutes.

This tastes great with a side Caesar salad!

Italian Wedding Soup

Hi all!

I had a great weekend with my sister and babies (Bryce & Bailey) in Michigan. We made this soup one night for dinner, and it has become one of my favorites!

Italian Wedding Soup (original recipe found on All Recipes):

  • 1 pound Ground Beef
  • 2 Eggs, beaten
  • ¼ cup Dried Bread Crumbs
  • 2 tablespoons Grated Parmesan Cheese
  • 1 teaspoon Dried Basil
  • 3 tablespoons Minced Onions
  • 2.5 quarts (80 oz.) Chicken Broth
  • 2 cups Spinach, packed, rinsed and thinly sliced
  • 1 cup Seashell Pasta
  • ¾ cup Diced Carrots


1. In a medium bowl, combine the beef, egg, bread crumbs, cheese, basil and onion. Shape into 3/4″ balls and set aside.

2. Heat chicken broth to boiling in a large stockpot. Stir in the spinach, pasta, carrots and meatballs. Return to boil, and then reduce heat to medium.

3. Cook, stirring frequently, at a slow boil for 10 minutes or until pasta is al dente, and meatballs are no longer pink inside.

4. Serve hot with Parmesan cheese.

Back to the Gym

I must admit, exercise was not on the top of my priority list once I started working. I worked in Center City, Philly, for 1 1/2 years, often working 12-hour days with the commute. Unfortunately, I did not make the time for working out or the gym, until B and I recently joined a LA Fitness.

I have been very happy with LA Fitness. I have always loved group fitness classes, and I have been doing the “Body Works Plus Abs” at least weekly since joining. This class is a great mixture of both cardio/aerobics and weights. I feel like I got a great workout at the end of the hour class. Now that I will be working much closer to home, I plan on trying some other classes like Kickbox Cardio, Cycle and (maybe) Zumba!

When I only have the time for a quick workout, I turn to Pinterest for some ideas. My current favorite leg workouts are:

I have “upgraded” some workout gear, which is definitely good motivation to get to the gym! I have found some great deals and finds at Marshall’s and Target. These are two of my favorite shirts, found here and here. I love my new bright green Nike sneakers found at the outlet store.

What I’ve Been Up To

It’s been a while!

Since I last posted, I left my job in Gastroenterology and will be starting in Ob/Gyn (which is 5 minutes from where I live!) on August 1st! I am taking a little time off between jobs to get everything ready … and visit my sister and brother-in-law (and this cute pup!) in Michigan.

Since I last posted, I had a visit from some my best friends from college! :)


We also got “down the shore” (aka my happy place).

I have had the time to do some cooking and baking. I most recently made two recipes from Holly’s blog, Spicy BBQ Ranch Chicken Burgers and Nutella Peanut Puppy Chow.

I forgot to buy hamburger buns this time, but the burgers tasted just as good on toasted bread. Check out the recipe here! I highly recommend both recipes.

Another Mexican Recipe

I can’t get enough of Mexican recipes. Some of my favorites are the Taco Bake, Crockpot Cornbread Chicken Enchiladas, and Taco Joe’s.

Tonight, I made Mix & Match Mama‘s Mexican Biscuit Casserole.

Mexican Biscuit Casserole, recipe from Mix and Match Mama



  • 1 pound Ground Beef
  • 1 package Taco Seasoning (1.25 oz)
  • 1 can Chili Beans (optional)
  • 1 cup Frozen Corn
  • 1 can Pillsbury Refrigerated Biscuits
  • 2 cups Cheddar Cheese, divided


-Preheat oven to 400*.
-Brown ground beef and drain.
-Add taco seasoning, chili beans, corn and 1 1/2 C cheese.
-Transfer mixture to a 8 x 8″ dish.
-Top with biscuits (dough) and add remaining cheese on top.
-Bake uncovered for 25 minutes.

Crockpot Sunday: 3-Ingredient Pulled Pork

I hope that everyone is enjoying this Memorial Day Weekend. I have another crockpot recipe to add to the list – Pulled Pork! You can’t go wrong with this recipe, which only calls for 3 ingredients.

Crockpot 3-Ingredient Pulled Pork, recipe adapted from YummyMummyClub



-2 lb. boneless pork picnic roast

-1 (18 oz.) bottle Sweet Baby Ray’s BBQ sauce

-1 bottle of beer


-Spray crockpot with Pam.

-Mix BBQ sauce and beer* in bottom of crockpot. Add the meat and cover with sauce.

-Cook on LOW 8-10 hours.

-Shred meat with two forks. Serve on buns.

*Next time, I may cook the pork in the beer only and add the BBQ sauce later for more flavor. Overall, it was a very good (and easy) recipe!

Sister’s Gender Reveal

Today was a very special day!

I found out that my big sis is having a baby … BOY!! I already can’t wait to spoil my little nephew.

Since L lives out of state, she came up with a FUN gender reveal for us. We each got 2 envelopes this past weekend- a “frog” and a “bear”. After her appointment this morning, she called me at work (thankfully before my morning patients arrived) to tell me which envelope to open (which was the “bear”).


Inside was a card (found on Etsy), asking “BLUE or PINK?”.


Ever since we were little, I have always said how I think L will have a boy, so I scratched over the blue circle. I obviously was so excited that I did not even get a picture of the card before scratching to find out the gender! I’m pretty sure I yelled when I instantly saw this …

I am so happy for my sister and brother-in-law. Now time to start buying cute clothes (does anyone else think that onesies with prints on the bottoms are the cutest??) and brainstorming ideas for the nursery.

Also in BIG news: I gave my notice this afternoon at my current job. I am happy to report that I accepted a new job in OB/GYN (at a site where I had a rotation in PA school), which I will start later this summer. I am looking forward to this change and thankful for the opportunity.
