I absolutely love easy, delicious recipes during the work week. Tonight, I made these Pepperoni Pizza “Enchiladas”.
Pepperoni Pizza “Enchiladas”, recipe from Picky Palate
(Before the oven)
- 9 Small Taco Size Flour Tortillas
- 26 ounces Pizza Sauce
- 1 package Pepperoni
- 3 cups Shredded Mozzarella
-Preheat oven to 350*.
-Spread 1/2 C pizza sauce into 9 x 11″ dish.
-Prepare the “enchiladas”: 2 T pizza sauce, 4 pepperoni’s, 2-3 T shredded mozzarella. Roll and place seam side down in baking dish.
-Top with remaining sauce, 3/4 C shredded cheese, pepperoni’s.
-Bake for 25 minutes.
I ended up using less than 1 package of Pepperoni, but use as much as you would like!
Next time, I plan on customizing our “enchiladas”: Pepperoni, sausage & bacon for B, green peppers and tomatoes for me! ;)
